4 Step- Gluten Free/Vegan Pancake Recipe

My favorite guilt-free Sunday treat, I hope you enjoy these home-made gluten free and vegan pancakes as much as I do!




Ingredients:

  • 1 tsp maple syrup

  • 1/2 cup almond or oat milk

  • handful Lily's chocolate chips

  • 1/2 tsp vanilla extract

  • 1 mashed banana

  • 1/4 cup potato starch

  • 1/4 cup quinoa flour

  • 1/2 cup oat flour

  • 4 tbsp almond flour

  • 1 tsp baking powder

  • 1 1/2 tbsp avocado or coconut oil


Instructions:

  1. In a mixing bowl mash the banana and add maple syrup, oil and milk

  2. Whisk together the dry ingredients

  3. Blend wet and dry ingredients together, add milk if you want to thin out the batter

  4. Sear pancakes on a pan

  5. Add toppings and enjoy!


Ingredients for Strawberry Jam:

  • 2 cups of fresh or frozen strawberries

  • 1/2 cup of water

  • 1/2 tsp of vanilla extract

  • 2 tbsp of maple syrup


Instructions: Simmer on the stove for 15 min
