One bulb of Fennel
2 tbsp Olive oil
Juice of an orange
Salt & Pepper
Slice the fennel into thin slices, I like to use a mandolin to shave the fennel paper thin.
To make the dressing mix together olive olive, fresh squeezed orange and lemon, and season with salt and pepper.
Add in the parsley (or your herb of choice) and fennel. Give it a toss & enjoy!
