Protein Packed Kimchi Fried Rice (V, GF)




Kimchi Fried Rice is a South Korean fried rice made with Kimchi and diced vegetables. This GF, DF and Vegan version is by far my favorite. I hope you enjoy making it as much as I do! Easy, fast and delicious.


Rice: millet, buckwheat, brown rice, red quinoa, sweet brown rice, black rice, red rice


Ingredients: (serves 4)

-1 cup seven-grain dry rice or grain of choice I like using brown rice.

-1 carrot

-2 green onions

-1 small yellow onion

-1/2 bell pepper

-handful shiitake mushrooms

-handful baby Bello

-1/2 cup kimchi + kimchi juice

-1 tbsp avocado oil

-1 tbsp sesame oil

-2 tbsp coconut aminos

-1 tbsp red pepper paste

-salt + pepper to taste


Directions:

1. Cut up vegetables and sauté mushrooms, onion, kimchi, bell pepper, carrot with avocado oil with seasoning.

2. Once fully cooked add in your mixed grain rice with pepper paste, sesame oil, and coconut aminos.

3. Serve and top with green onions! I like to cut mine with a cooking scissor.
