Always a Good Time for Pumpkin Pie


You can never go wrong with Pumpkin Pie for dessert. The most comforting kind of pie and in line with the fall/winter season. This recipe is healthy yet flavorful and so easy to make. Give it a try... you will certainly want to have it for breakfast, lunch and dinner.



Ingredients:

  • 1 can organic pumpkin purée

  • 2/3 cup full fat coconut cream (make sure it does not have any additives)

  • 1/2 cup coconut sugar

  • 1/4 cup oat flour

  • 1/4 cup maple syrup

  • 1 flax egg

  • 2 tbsp potato starch

  • 1 tsp pumpkin pie spice

  • 1/2 tsp cinnamon

  • 1/2 tsp vanilla extract

  • dash of salt


Pie Crust:

  • 1 cup oat flour

  • 1 1/4 cup almond flour

  • 1 date

  • 1 flax egg

  • 4 tbsp coconut oil or vegan butter


Directions:


1. Preheat your oven to 350 degrees.

2. Mix all wet ingredients together. Once fully incorporated add in the oat flour, potato starch and spices and mix.

3. Add mixture to crust and bake for 35 minutes.
