Hosting a #tacotuesday or in the mood for a Mexican feast? These chickpea tortillas make for the perfect do-it-yourself meal for you and your friends!

Makes 6 tortillas.
Ingredients:
1 cup of chickpea flour
1/3 cup of tapioca starch (from cassava)
1 1/2 cup of water
Instructions:
Add chickpea flour, tapioca starch, and mix together to large mixing bowl,
Add more water if needed, and whisk thin and creamy like a pancake batter.
Heat a non-stick pan over medium heat until golden brown.
Add some toppings and enjoy!
