Ingredients:
1 Box Annie Chun's Brown Rice Noodles
1 Box Shiitake Mushrooms
1 Small Onion
1 Bell Pepper
1/2 Cup Chopped Carrots
3 Cloves Garlic
1/4 Jalapeño (or as desired)
Salt to taste
Almond Butter Sauce:
4 tbsp Coconut Aminos
1 inch Grated Ginger
2 1/2 tbsp almond butter
1 tbsp sesame oil
1 juiced lime
Toppings:
Cilantro leaves
Chopped green onion
Directions:
In a bowl mix the almond butter, coconut aminos, ginger, sesame oil, and lime juice.
Boil noodles as instructed.
Heat some avocado oil in a pan and stir fry the carrots, peppers and onions.
After 3 minutes add in the garlic and mushrooms.
Drain the noodles and add to the pan. Add the almond butter sauce and stir fry over a high heat for a couple of minutes.
Serve with cilantro leaves and chopped green onions.
