Vegetable Thai Noodles (V, GF)


Ingredients:

  • 1 Box Annie Chun's Brown Rice Noodles

  • 1 Box Shiitake Mushrooms

  • 1 Small Onion

  • 1 Bell Pepper

  • 1/2 Cup Chopped Carrots

  • 3 Cloves Garlic

  • 1/4 Jalapeño (or as desired)

  • Salt to taste


Almond Butter Sauce:

  • 4 tbsp Coconut Aminos

  • 1 inch Grated Ginger

  • 2 1/2 tbsp almond butter

  • 1 tbsp sesame oil

  • 1 juiced lime


Toppings:

  • Cilantro leaves

  • Chopped green onion


Directions:

  1. In a bowl mix the almond butter, coconut aminos, ginger, sesame oil, and lime juice.

  2. Boil noodles as instructed.

  3. Heat some avocado oil in a pan and stir fry the carrots, peppers and onions.

  4. After 3 minutes add in the garlic and mushrooms.

  5. Drain the noodles and add to the pan. Add the almond butter sauce and stir fry over a high heat for a couple of minutes.

  6. Serve with cilantro leaves and chopped green onions.
